We had a lot of snacks this weekend – particularly chips, salsa, and guacamole.
We didn’t make it to the store when we got home, so I had to improvise last night. It might not be the healthiest dinner ever, but it’s certainly healthier than regular nachos and just as tasty!
(Yes, we had 5 types of salsa leftover – and we have doubles of some types in the fridge!)
Fiesta Nacho Bake
- Tortilla chips
- 2 teaspoons olive oil
- 1 onion, diced
- 2 cloves garlic, minced
- 1 zucchini, sliced
- 1 carrot, sliced
- Juice of 1 lime
- 2 cups black beans, drained
- Nacho Cheeze (From OSG)
Preheat oven to 350 degrees. Meanwhile, heat oil over high heat in large pan. Add onion and garlic and saute until fragrant. Add zucchini, carrot, and beans and saute until vegetables start to soften. Add lime juice and stir; cook until most liquid is evaporated.
Spread a handful of chips at the bottom of an 8 x 8 pan; top with cheeze and veggies. Build another layer of chips, cheeze, and veggies.
Bake for 10 minutes. Remove from oven and serve with favorite salsas and guacamole.
