Yummy Odds and Ends

Random vegetable odds and ends at the end of the week can lead to delicious results. I wasn’t even planning on putting this on the blog, but then it was so good that we had it two nights in a row – so I decided it was worth it!

For my tomato product, I used my homemade ketchup which is smoky and paired well with the vinaigrette. I’m sure any spicy or fire roasted tomato sauce would work.

Ingredients:

  • Half bunch of kale, chopped
  • 1/2 cup millet
  • 1/2 onion, sliced thinly
  • 1 tbsp olive oil
  • 3/4 cups tomato sauce of choice
  • Salt and pepper to taste

Chipotle Honey Vinaigrette

  •  2 tbsp apple cider vinegar
  • 1/4 cup olive oil
  • 2 tbsp lime juice
  • 1 tsp honey
  • 1 – 2 tbsp adobe sauce
Method:
Bring millet and 1.5 cups of water to a boil; reduce heat and simmer until done, about 20 minutes.
Heat olive oil in pan on medium-low heat. Add onions and a pinch of salt. Stir to coat in oil. Allow onions to caramelize, stirring occasionally, for 20 – 30 minutes.
Steam kale to desired level of crunchiness. When kale and millet are done, add to the onions. Add sauce and heat through.
Divide into two bowls, and top with 2 tsp of the chipotle honey vinaigrette.
