Chocolate, Coconut, and Cuddles

A quick post this morning with a decadent breakfast from the weekend. You can’t even tell it has (almost) no added sugar. Plus, it kept me full for hours as we trekked around looking at wedding venues – post on that coming later! We enjoyed it along with some morning cuddles. (Excuse the terrible photo. I was starving.)

Chocolate-Coconut Overnight Oat and Banana Parfait


  • 1/2 cup oats
  • 2 tbsp chia seeds
  • 1 tsp chocolate extract
  • 1/4 tsp cinnamon
  • 1 cup almond milk
  • 2 frozen sliced bananas
  • Coconut butter
  • Almond butter


  • Whisk first five ingredients together in a bowl. Refrigerate overnight.
  • In the morning, use a food processor to create “banana soft serve” from your two frozen bananas.
  • Put in a layer of overnight oats, then soft serve, then as much or as little almond butter and coconut butter as you’d like. Keep creating layers. Garnish with coconut.
  • I also melted chocolate chips and dolloped it on top, but next time I think I would just mix some in. If you leave them off, you have NO added sugar at all.

The coconut butter hardens between the layers, which adds some crunch. It’s like a healthier version of the magic shell from a bottle!
